it's this w/some changes; first i eyeball 1 tsp creole mustard into the roux, and in addition to the s+p called for i do 1 tsp garlic powder, 1 tsp onion powder, 2 big tsp italian seasoning blend, and 1/4 tsp white pepper. for cheeses i like ~75/25 sharp cheddar/gouda, and more than 2 cups total ofc

Using the oven makes a big difference. I got a pen ready if you drop the recipe.
