Vallée D’Auge Chicken (food): A perfect autumn dish of mushrooms, shallot, & chicken thighs in a creamy apple cider infused sauce poured over butter-fried apples. This was a first attempt & sweet merciful cosmic crisp it will not be the last! Absolutely divine!

My dudes, it’s time for an 800 mile Patagonia Bikepack Tour! The gravel bike arrives December, gonna do some trips around Utah/Colorado next year, learn some integral bikepacking maintenance, relearn some Spanish, & get at it 2027 or 2028. Companions welcome, if you want in!

Beef Bourguignon (food): This was a first attempt & it turned out great! A good balance of sweet, savory, & tangy between all the the broth, meat, & veggies! It’s pretty easy to make, but kind of annoying to scale, so I cooked for some of my family & they enjoyed it, which was nice.

Currywurst (food): You can’t readily buy curry ketchup in the USA & I think that’s a crime, but making it yourself isn’t difficult & tastes better anyway. Actually, currywurst not being available is the biggest crime! I’m cornering the market & opening a currywurst stand next to a bar.

Lamb Rib Chop in Mushroom Cream Sauce (food): This was a first attempt & the sauce came out thin & discolored, but the dish was still plenty flavorful & delicious. I’ll be adjusting a few things in future attempts, but overall quite good!

Leek & Potato Soup (food): It’s soup week all week at my place! Today & tomorrow (b/c leftovers), leek & potato soup! Boiled leek, onion, & potatoes in chicken stock, add a hint of cream, blend it together! Simple & delicious!

Duck Breast & Sarlat Potatoes (food): Thinly sliced potatoes cooked in the ducks fat until slightly crispy! This is one of those finicky dishes that needs a lot of your attention, but it’s divine! 😙👌

Flank Steak in Roquefort Sauce (food): Gifted a French cookbook for Christmas and am slowly making my way through it. I’m really not a fan of steak or blue cheese so it was stacked against me, but the cheese was muted enough in the sauce & grew on me. Overall, it was fine, but not a repeat dish.

Tim’s Vermeer (Documentary): An extraordinarily fascinating doc about the intersect of art & technology. Almost prescient of AI in art, but not quite. You might also feel like a lazy piece of crap after watching this.
