Linux (or possibly BSD) is the only viable option for what you're looking for. You can pick from multiple GUIs or none at all, and it's secure by default. It's free to use and customize, and not subject to the marketing whims or proprietary bullshit of Microsoft or Apple.

For those of us in California, with the new mpox strain that recently showed up, it's probably a good idea to get vaccinated now before RFK Jr. and his worm are able to save us from ourselves and all that dangerous sciency and doctory stuff.
