Jarlic can go bad. If it makes your food taste like acid it’s because you used expired food.
Frozen is fine, but not practical for everyone. Jarred is also perfectly fine.

You won’t notice a difference in cooked foods or marinades at all, probably even if you tried them side by side. If it’s gunna be fresh or fried (like a caprese, or to rub on garlic bread) use fresh cloves but otherwise, spend your time on other things!
