One of the best pieces of advice a senior executive gave to we juniors was never use your sick days when you're sick. Save them for days that it's sunny & beautiful outside. Always passed that on & it makes such a difference in your people's perspective

If the rest of her family eats gluten then that sounds like you’ve got a great strategy! A lot of GF flours/mixes tend to be dry or bake a few minutes faster than gluten versions. Otherwise I don’t really have other helpful tips. I’m sure she appreciates the effort to include her 💛

Do you know if the person you’re making it for is gluten intolerant or celiac? Unfortunately cross-contact is pretty likely for someone baking in a non GF space and depending on why they are GF they may not be able to eat it, despite the lovely impulse to be inclusive
