It's precisely the point, though. Hire more people and train them to do the job if you need more capacity.
Also the compute costs of LLMs are astronomical, but that's subsidized so you don't see that cost yet. But you're not factoring that in either

How about hire more doctors? Or hire people to transcribe and summarize appointment conversations?
This is my problem with this entire approach. Solutions are geared toward saving money, not doing a better job.
The fundamental proposition of AI is "worse job, but more money for you(investors)".

And then you need someone to validate that the LLM got it right, so you're either not saving any effort, or you're inviting errors like below.
