When I was a young,I would be called upon to show off my etch a sketch skills for my parents. Last year i used one for the first time in many decades. I drew my husband and some of the things he loves.The guitar is faded and the paintbrushes partially obliterated, but he keeps it. 🤣

That being said - my son stressed I should go by visuals instead of times included in the recipe; my kitchen is very cool in winter so my times for the levain and the bulk rise were MUCH longer than in this recipe.
Instructions from my son on timing for sourdough levain and bulk ferment. Biggest thing, go by visuals, not by times. Your levain should be doubled and should look spongy when it's ready to go. Your bulk ferment is done when the dough has increased in size by 75-100%
