Ragu alla Napolitana, made w/ short ribs and Italian sausage. This is the final step. I removed the meat after 3 hrs, and cooked for another 2 hrs. Tomorrow it goes in Lasagna alla Napolitana w/ ricotta, fresh mozzarella, and parmigiano reggiano, and the Italian sausage from the sauce.
