I had the same problem. I put a glass pie pan in the bottom and that solved it for me. 😊

I recommend Ken Forkish book Flour Water Salt Yeast. It really helped me get started. Good instructions and photos! Go for it, so much better and healthier than a lot of what you can buy. More cost effective too!

I add sweet or neutral inclusions with the levain (after autolyse). Salty (like olives) wait until 2nd or 3rd fold.
