I think (computer) engineering in general is a niche market. Apple has been converging desktop towards mobile for years: it's their strategy.

Personally, I use mobile/tablets for communicating, and my "desktop" for creating

This might be my new favorite account on this platform

oh shit - I forgot squid and octopus

I don't know if parmesan or even parmagiano-reggiano works here or not. I'd have to hear of some real amazeballs shit

it's also worth noting my very limited knowledge of fish/cheese pairings is in no way reflective of anything more than does cheese indeed make everything better?

I think the answer is yes in the very general sense.

I suspect there are those out there who are wondering why such a deep dive on the subject of seafood / cheese pairings?

It's cool yelling into the void like this.
December 19, 2024 at 12:59 AM
ok, crustaceans are up next.

again, exempting the aforementioned hard cheeses, I'm a pass.

Parmesan on crab is probably amazing. Lobster is so delicate, cheese is a difficult pairing for me.

the trauma there is a shrimp dish I was made to eat growing up more than once. Just awful
December 19, 2024 at 12:56 AM
ok - hard cheeses are exempt from this. Hard cheeses are delicious on seafood.

Shit, what constitutes a hard cheese vs other not-soft cheeses? A good cheddar is always welcomed, just not with seafood. I feel I'm going to regret that in a few posts
December 19, 2024 at 12:53 AM
ok, let's move to mollusks, bi-valves, and the sort. We'll get to crustaceans in a sec

Right cheese, right time, I'm down. A good hard Italian cheese grated on a lot of things is amazing. Probably fish too. Fuck it.

that cod / yellow cheese thing is really hard to forget. Chilling

there's also the Tuna Helper exemption to consider.

I grew up on that trash, but it does hold a place in my heart

I amend my earlier policy. We have to be REALLY specific about the cheese being paired withe seafood. A sad attempt at a thread to follow
December 19, 2024 at 12:29 AM
Yeah, this one sold me too. There might be a bi-valve carve out in my policy. And we have to be specific about the cheeses too! I have had a couple of cheesy seafood dishes the soured me on the category as a whole.
December 19, 2024 at 12:17 AM
I have not. That might be an easily allowable exception. Hell, all bi-valves really. . . . .
December 19, 2024 at 12:15 AM
seafood is not better with cheese

it remains the lone exception

I did one where I expressed the entirety of a mild mental breakdown and no one noticed

to my quite pleasant surprise, he set the bar relatively low. An evening of debauchery led to a simple challenge: prove that I could bypass his perception of having a secure board

So I laid out a challenge

If I dod not deliver as promised, I would accept his online scorn.

But should I somehow deliver something deemed impossible, I had earned enough credibility to express an opinion publicly

the game was afoot

over a period of an hour or so, I explained to him how i did what I did. And why I did things the way I did

Yet somehow he remained unconvinced. He told me I could not do something I knew I could do, because i had done it before

DB and I were out drinking one night, as we often did back then. He mentioned a particular user on his board who was giving him problems. I knew the situation all too well.

You see, I was that very user causing him his current anguish.

Among a few other personas
