My idea is that everyone keeps their cards secret until the moment of the game, show it only to the ref, they decide how it plays and is a secret to everyone else.
Either that or secret to everybody and ref has to wing it with the rules as their played

And on the fly rule adaption, get someone to be a ref to think of how each card adds to the game, he might say a royal flush gives you 15 extra points to your mtg life total.
