In my household, roasting/grilling a vegetable until it looks like you've ruined it (but you haven't) is called Baylessing. "I'm gonna Bayless these peppers."

Add salt at each step, and with each dose of kale you add to the pan. Use whatever cooking fat you like. If you've got more time and energy, caramelize the onions. If less, buy your vegetables already cut. Any form of garlic is fine. Add anything else you've got that sounds good (olives are nice).
