This particular population is stocked in a high alpine lake to pull from for recovery across the rest of their native range here in SW Montana.

I like to use aromatics inside poultry when roasting one whole.
First, I microwave apple, shallot, cinnamon, black peppercorns, bay leaves, and rosemary in a little water. Then they go in.
It helps heat the bird from the inside… and they look and smell 😙👌

• 1/2 shot Rosemary Simple Syrup
• spoonful Angostura Bitters
• spoonful Pinecone Schnapps (or dry vermouth)
