I like to chill to dough for 40-45mins before rolling it out and cutting, but you don’t have to do this

300g plain flour, 200g butter / margarine, 100g caster sugar, 1 egg. Beat butter till soft, but don’t over-beat. Add sugar, mix till combined. Add flour and egg. Don’t beat too vigorously.
Roll out to 0.5cm. Cut. Bake at 400F for 10-15mins till golden 😊
Raspberry jam inside, icing sugar+water on top

My husband is very tolerant 😂... we have a small house, and don't really have room, so a lot of these things end up in boxes. But we have plans to make the spare room officially my painting room, and I hope I can display some of these things so I can enjoy looking at them ❤️
