If you want a perfect turkey, use a covered roasting pan.

I stuffed the 15lb bird with onions, lemons and a bulb of garlic cut in half. Loaded it in upside down for a 30 minute sear at 450, then flipped it back to cook for 90 minutes.

Ninety. Minutes.

Perfect, juicy bird.
Using a covered roasting pan makes cooking a turkey go very fast, and results in a perfectly moist bird.

Truly, there is no more quintessentially "country" thing you can do in a freezing cold fall rainstorm in Upstate NY than to make sauerkraut.

I paid $20 for that antique cabbage slicer, and I can't think of anything better that I could use for this job.

The black pot is the salting barrel, where I mix the salt with the sliced cabbage, prior to loading. I'm using a Great Value gallon vinegar bottle, filled with water, as a kraut pounder to mush it all down.

The difference between #iOS, #MS and #Linux.
I had a story about the difference between the three OSes once. The Apple OS is like the chrome spaceship in The Phantom Menace. It's slick! It's sleek! It's beautiful! And it Just Works. Give it to a toddler, and it works. Give it to an elderly person, and it works. Give it to just about anyone, and it Just Works. But it is EXPENSIVE! The good news, is that because it's so expensive, you become part of a very exclusive club, filled with people who will judge you based on what edition you own. But it's worth it, because even if you are a status-obsessed asshole, or just a simple person that has simple needs, it Just Works. Just never make the mistake of rummaging around under the hood, because Bad Things happen when you do that. Much like when Adam and Eve ate the apple and were banished from paradise, there is no return Walled Garden of the Orchard once you have sinned against the Apple. The Microsoft OS is like a Greyhound Bus. It's old, it's fat, it's not very fast, and there's several old versions of it. But just about everything works on it, and it's very inexpensive. More importantly, it can be shoved into all kinds of chassis! You can put it in the frame of a Lamborghini, or a Land Rover, and it should work. And best of all, pretty much anyone can work on it and fix problems. The downsides are that pretty much anyone can work on it, including Bad Guys. And those Bad Guys find all kinds of ways to hijack your machine, usually without you even knowing it! The other downside is that when the chassis gets too old, the OS is just too big and bloated to work on it anymore. The Linux OS is a rocket. Note that I didn't say rocket ship, I called it a rocket. There's no cockpit, no berthing compartment, no bathrooms. No, there's just an eyehook and a panel on the surface. As you examine the rocket, you see the strangest assortment of people hanging on to it. Geeks, nerds, spies, anarchists, scientists, loners, researchers and other wild creatures have all fastened their cable to their eyehook and are holding on to this rocket as it screams across the Information Superhighway. If you fasten your own cable, they will all cheer you on. If you fall off, they'll all laugh at you. When you need to fix something, they all tell you to climb the cable and open the panel, pick up a hammer, and start bashing on the stuff inside. Nobody can give you specific advice, because their panels are different than yours. The benefits are that you are the fastest rocket on the Information Superhighway, and no Bad Guys can even touch you, let alone catch up to you. And it's free! Once you clamp your cable to it, it's all yours, for no money at all. The downside is that you eventually start to look and act like everyone else hanging on the rocket.

Consider what happens if aliens are revealed to be real. 1st thing that happens is dozens of politicians start DEMANDING an "Alien Invasion Defense Plan", along with new weapons, missiles, bombs and personnel. 2nd thing is you get hundreds of thousands of people protesting. Some will be welcoming, most will be demanding the aliens leave, and an amusing fraction will be asking them to bring back Elvis or "Probe me!". But the worst thing will be religion. Islam toys with the idea that we aren't alone in the universe, and Hinduism straight up has a best-selling novel called the "Bhagavad Gita" about horny alien gods spawning humanity. But Christianity's entire foundation is all about mankind being created in the image of God, and we're the only ones out here. A foundation which isn't just going to crumble, but get blown up, smashed to dust, and blown away in a puff of logic. And one thing we know about religious folks, is they get really hacked off when you question their faith. The other thing about religious people, is that when they get hacked off, they get violent. So who will they get angry at? (shrug) Iunno? Whoever they usually get angry at, who knows? I doubt even they know who they'd be angry at, but it's absolutely certain that it would be really dumb.
