ive never used emudeck sadly, i did nearly everything on desktop mode with a mouse and keyboard, after the stick drift set in i made it my desktop pc until i could afford a real one

id still try downloading the win version and running with proton through steam

are you using the steam store version or the standalone version? might have better luck with the other one or even running the windows version through proton
