I used to candy violets as a child, the idea brings back fond memories. If I remember right, I used lightly beaten egg white and powdered sugar and allowed them to dry naturally. Now days, I find they are fun frozen into ice cubes or used for sun tea with a few leaves of mint added.
Spring has definitely sprung. So many wildflowers in the yard! Also enthusiastic clusters of wild onions.

I took some of the violets inside and my cats immediately ate them. I may have to pick some more and try candying them, I've heard they're good that way.
