Brilliant!
Fantastic book. Should be required reading

So beautiful! 😍

Rightly so! 🙌

I thought you were civil, not chemical 😜

Noooo. I'd be escared of insufficient control of sugar temperature 🫣
Have you ever seen what happens when sugar reaches its autoignition temp?

Good for you!

It's the only thing I use it for. Luckily in Canada, we have a magical place called Bulk Barn where you can put only as much corn syrup that you need in a container, then pay by weight

I think that's a cauldron 😆

If you seem to be getting crystallization on the sides of the pot, brush the sides, just above the caramel with a pastry brush and water.

When you reach 235ºF, take it off the heat and add baking soda in the same amount as your salt. Mix the caramel with the popcorn and bake 1hr at 200º, stirring 2 or 3 times.

I'm a little more loosey goosey. I usually use 1:2:4 by volume light corn syrup, unsalted butter, brown sugar. Add approx 1/2 tsp salt for roughly each cup of sugar (or more if you want a more salted caramel). Cook to 235ºF.

I could haul out the big (16 quart) stock pot ... 🤔

Buggers!

20 cups??! I never make that much at once (because I'd eat it all)!
December 9, 2025 at 2:55 AM
I use a big sauce pot. But the thermometer is essential!

The gang loved it this morning when it was -21º (-6ºF)!
I think most heated baths are fairly shallow: easier to heat and not too deep for little birds. I think the trash pandas would become disillusioned with that jacuzzi pretty quickly

My favourite duck! 😍

Might as well make caramel corn to make up for the last few decades

They also seem to enjoy some time at the suet feeder and heated bird bath
Pics from yesterday, through the bedroom window 🪶
