Add the rest of the spices, vinegar and lemon juice. Simmer for five minutes.

Add in squash and simmer until squash starts to soften.

Stir in canned beans.

Serve with sliced avocado, a dollop of creama and chopped cilantro.

You can shredded chicken and cheese to boost protein.

1 can pinto beans
1 can black beans
1 can red chili beans

Chop all veggies into small bite size chunks. Rice the cauliflower.

Sauté onions, red pepper and carrots with garlic, salt and pepper.

As the onions turn clear add the riced cauliflower, a can of diced tomatoes and can of green chilies.

2 yellow squash
2 zucchini
1 red pepper
1 onion
2 carrots
1 head of cauliflower (riced)
1 tsp salt
.25 tsp pepper
1.5 tsp Mexican oregano
1 tsp Cumin
1.5 tsp garlic
.25 tsp chipotle pepper
1 can diced mild green peppers
1.5 tsp Tajin
2 tbsp lemon juice
1 tbsp apple cider vinegar

We add shredded chicken and cheese - usually for my hubby. I like it with just the beans and veg. I can post recipe if people want it.
