If you consider random NPC dialogue "boring and unimportant" and you're okay with relegating that to gen AI, frankly I can't trust that the rest of your narrative is any good either.
Buy a solo indie dev's game because I want to support them.
Find out it uses OpenAI to write "non-important NPC dialogue".

The Trails series has a per-game average wordcount of ~850k and most of that goes to NPC (and treasure chest) dialogue, with later games keeping track of ~200 unique NPCs while they go about the daily lives. techbros will not achieve samsara
