You can wind a contrast color of waste yarn between your stitches—so like every 3rd or 4th stitch pass the waste yarn back or front. You can then use that as a visual marker to orient up and down. It’s easiest to do while casting on, but you can do it with a tapestry needle afterwards too

Did you use vertical columns for a special reason or is that how you usually do it? Asking because I usually do horizontal rows and am interested if there’s a reason to do one over the other.

it's stockinette. The columns look that way because of how the yarn is spun and plied. This article does a good job of describing it:
