Americans 🇺🇸 have developed a taste for high concentrations of the 3 nutrients of concern. If I were starting a dietetics practice right now, I would focus on helping folks develop a taste for moderation / lower concentrations. It’s reasonable to expect food should taste good.

I find the Citizens Petition submitted by @davidakesslermd.bsky.social useful for fine tuning. Questioning the regulatory status of specific Processed Refined Carbohydrates is brilliant. Certain PCRs are markers of #UPF. Others combinewith other indicators (e.g., emulsifiers or stabilizers).

Your observations are spot on. I lived and cooked for many years in Garches, a suburb west of Paris. It’s a different food culture. But not impossible to implement here where I live in the Hudson Valley. Congratulations on the book! Clear, concise, engaging, informative. I’m about half way through.
