Deep-fried is great too, but probably not worth it for most home cooks. A hard roast gets you ~75% of the way there. Related: a trick for a really great roasted veggie (from a Cook's Illusttrated recipe decades ago) is to preheat the sheet pan.

Those Bar Harbor tins were (a big part of) how I got gout. Delicious! You might find pickled herring in wine sauce less offensive than the stuff in cream, especially if you can think of them as, uh, Northern European ceviche.
