I am wondering: Wouldn't all predictors in subsequent models also be predictors of sex and education? And the next problem: They did not use individual, but COUNTRY-LEVEL multilingualism. So what does this all mean??? Am I the only one who does not understand how this all works out? (3/3)

Among other factors, female sex and education were in this mix. In the next step, they used this model to predict individual age. If the predicted age was higher than the chronological age, this was seen as accelerated aging. Multilingualism was then used to predict "accelerated aging"(2/3)
