I don't think not liking something I do is indicative of not experiencing it properly. I have no objection to you or anyone not caring for pie. It was your stated reasoning - lack of textural contrast - that struck me as indicative of not having experienced good pie. At any rate, Go Pack Go!

I’m not trying to be insulting here. I’m just honestly befuddled by your viewpoint. I’ve been eating fantastic pies for over 40 years whether made by my mom, my dad, myself, or my wife and I just can’t wrap my head around it.

And I should say good fruit pie fillings will have subtle an pleasing textural contrasts. Things like key lime or lemon meringue are of course striving for uniformity of filling.

And that’s to say nothing of crumble and other toppings that give wonderful textural and flavor contrasts. I mean, there’s plenty of bad cake out there that is just undifferentiated mush. We all just gotta have the good stuff!

That isn’t so! The crust, even if there is no top crust, is crispy and flaky and layered and the perfect contrast to the filling. If you’re eating good pie, the bottom crust is still crispy. And a good pie filling always has subtle textural contrasts and depth of flavor. You’re eating bad pie!
