After the dry roux, I browned some andouille sausage and removed it, then sautéed some onions, bell pepper, and celery (tiny amount). While the veggies were sweating, I whisked in 2:1 ratio of chicken stock into the flour until it formed a paste.

Getting ready to make some #gumbo this afternoon, and prepping by roasting some flour for a #roux. In #cajun cooking, there are two oft repeated themes. One is related to the use of the “Holy Trinity” of bell pepper, onion, and celery. The other is the line “first you make a roux!” #cajuncooking
