First time using butcher paper with my barbecue. Pretty cool! And I bet it's not as easy to poke a hole in as it is with foil.
The meat is pulled pork, a la pork butt, (the top end of the shoulder, not the hiney).

While it's nice to not have larger chunks of potato in one's mashed potatoes, a potato ricer, as seen in the original post, makes lots and lots of tiny chunks. Was fun playing with a new kitchen gadget though.
And the taters did turn out rather nice and tasty.
