I hear every sourdough bake has a different personality. well fuck these guys 😂 autolyse was weird, dough never smoothed out, bulk ferment was a flop even though I used 200g of my peak starter, cold ferment made it sour but zero gas. remixed dough with 1/2tsp instant yeast. delicious flat fucks. 🥖💘

I was insane to go with the double chocolate for my first sourdough. I almost died getting it together. But it paid offfff 😍

oops it got stuck to the cheesecloth. and oops I guess it had poor gluten development anyway cause it just broke when I pulled it off.
I've slapped it around real good now, and the dough looks way better. now I just gotta hope the microbes stilll have steam, cause I don't 😴

everything seems like it's fine? idk if it needed more coil folds? it's marshmallow-y! I wish it had just a little more cohesion and surface tension. but overall, it going well? I think? I'm just going to let her sleep in her basket until *she's* ready.
