Was in the middle of watching today's episode on Youtube when it suddenly stopped and was removed from the site. It's even gone from my watch history. I can still listen to it in my podcast feed. But what happened on Youtube?

I have a mockmill. It's a gamechanger if you bake bread a lot and you like wholegrain. There are other flour mills but I like this one. Wheatberries are inexpensive and keep on the shelf forever. So it's very economical in the long run.

Thanks for this. This is a beautiful loaf that is encouraging me to try this technique. I did not think you could get a crusty loaf using yudane or tangzhong. But seeing this, I am trying it.

Dough temp is holding at 77°F which is a little high but acceptable.
