Continuing this trend to satisfy varying tastes in the household. I've got consistency. Now need to try some more variations.

One Dough Three Loaves

Two sourdough loaves baked in a pot and one baked in a tin. 1200 grams of flour. Divided by eye. I think I got the proportions right. Good rise. Shaping on the bread pan loaf should have been better.

Shaping Shaping Shaping
I shaped these loaves differently and it's so clear in the results. But my over fermentation issue is fixed. Minimal starter in the Leaven did the trick.

I over-fermented my sourdough today.
Temperatures rose this week and my dough rose way faster than expected. (A disappointing bake but still tastes good) So, I also took aim at making focaccia. My first attempt was in time for dinner the same day.

Back to boules

Got some good bolted flour again; so I stopped baking freshly milled whole grain flour in tins. It is more satisfying to get a good rise in this shape.

These wholegrain loaves broke open on the side in spite of 5 slashes on top. Still haven't purchased more flour; so I used what I had. 70% freshly ground red winter wheat and 30% commercial white bread flour.

Ran out of some flour but good things still happened.

Didn't have enough bolted hard wheat to make two loaves. So I made one loaf with 500g of flour along with more freshly ground Einkorn. Got great rise after bulk ferment and then in the frige. Turned out pretty well.

I forgot the Flax seeds! But it's all good. Putting the boiling kettle in the oven with the dough during bulk fermentation worked surprisingly well. #breadsky #sourdough

A little overdone but still within the borders of scceptable. I am happy with the rise. Last week I used 80% hard red wheat and 20% Kamut flour but did not like the taste. So I switched from Kamut back to freshly milled Einkorn. Used the Kamut to make chocolate almond biscotti.

Usually when I bake two loaves I get a good ear on the first loaf; but not on the second for reasons unknown. This time, it worked out. #breadsky #sourdough

Almost threw away this whole grain dough because I didn't think my leaven was strong enough. The weather turned cold and it rose slowly. But I gave it a chance. It appears to have turned out fine.
