A slightly overactive sourdough. It makes it a bit difficult to work with.

800 ml water
250 g sourdough starter
100 g rolled oats
75 g graham flour
Then of course:
400 g durum flour
400 g Tipo 00 flour
30 g salt
I also added 100 g sunflower seeds.
I did not include them in the hydration calculation.
This amount makes two fairly large loaves of bread.

You can actually learn to love oatmeal. 😀
I've become addicted to it for breakfast.
I usually add almonds, raisins, chia seeds.
I also have some leftover delicious dried plums.

A sourdough bread sandwich filled with roasted pork belly, served with a side of red cabbage slaw. The sandwich is topped with mayonnaise, Dijon mustard, and a mixture of iceberg lettuce and crème fraîche.
