Even though there are no poisonous look-a-likes, new-to-you mushrooms can have unexpected effects so it’s always best to follow SOP when finding something new!

Standard protocol, sauté with garlic and olive oil in cast iron, then taste one little piece and put the rest in the fridge; wait 24 hrs and if no issues, eat em or into an omelette they will go! It was hard not to eat the whole batch, they are soooooo good!!

With the stems, I used a radish kimchi recipe (that’s what is in the mason jars) and for the green leafy parts, I used a normal cabbage kimchi recipe. And then, a third not shone, I did a perilla leaf type kimchi on about fifty green leaves, to see how that would be.
