I was fixing our landscape lighting today and found a huge flush of hedgehog mushrooms in one of our tree groves!! I’m so excited because I’ve never had them and wanted to try them.

My favorite thing about Saturday mornings right now is going out to the garden, picking something for breakfast, finding chanterelles popping up in the yard and picking those, and making an out of this world omelette 😊

Fresh picked golden chanterelles from our yard with all the rain. Sautéed in smoked olive oil with thin sliced garlic, ohhhh umami!! What a delicious after dinner treat!

I thought it was a hummingbird but it turns out it’s a type of moth that acts a lot like a hummingbird. Such a cool thing to see!

Garden omelette this morning, fresh golden chanterelles from the yard, Swiss chard, bok choy, cilantro, shishito peppers, cherry tomatoes and some garlic! All from the garden or yard except the garlic (maybe next year!)

Check out this beautiful garden harvest. My first year growing potatoes and this was a nice harvest of new potatoes from one of our plants 😊

Oh yes!! Korean inspired goodness for dinner. Fried egg over rice, mu radish recipe but with cucumber from the garden instead (sliced and spiraled), sesame leaf kimchi with Swiss chard, mu radish, michilli cabbage kimchi, and blistered shishito peppers in the center. All from our garden!

I found this relative of the porcini mushroom, in our front yard! It’s called Old Man of the Woods and is a type of bolete, so into the pan it goes with some garlic to try! If I get more I’m going to dry them to make some mushroom sauce.

Swiss chard, peppers, and dill from our garden, wild cinnabar chanterelles, garlic and topped with 1000 day aged gouda. Quite a delicious omelette this morning for breakfast!

The front garden project is pretty well done at this point! There’s a little more edging to install around the back, but all the wood chips are down and all the beds are planted. Very proud of how it’s come out 😊

Fermented in the ongi for a couple of days and now packed up and ready for the fridge. The flavor is fantastic!

If the ongi is full, then you know we’re finished! Kimchi is packed and going to start fermenting soon and we made a little fresh kimchi to go with the galbi tonight! This batch smells as good as the last, so here’s hoping it just as tasty!

Well I made my first ever H-Mart visit today! We bought all kinds of goodness, but had to start the experience with lunch at the food court. Some bulgogi for me, japche for my wife, and mandu for the both of us. There’s some kimchi making in our near future and definitely some galbi coming! 😊

I finished the trellis tonight and almost all the beds have been fully planted! I’ve gotten a lot of compliments and the herbs smell so amazing! Next is to put down the wood chips and ground cover.

Well it poured buckets this morning and then the sun came out. We hiked a couple of trails today and saw some more beautiful scenery and just got back to the campsite before the rain started again. Five beautiful hours of hiking today and a nice picnic lunch on the Cape Fear river.

Sharing my latest project. I’ve been building a garden in the front yard and finally got nearly all the boxes built and filled with dirt ready for planting! I still need to make the obelisk trellises for the square ones and the arch trellis between the two L shaped ones, but very excited!
