No moldy stuff, no mozarella, it will fuck with the texture (or chatch on fire if your luck is bad enough). Also I personally prefer not to preheat the oven, so the center has more time to come up to temp. If you dare to defy me you peasant preheat on 463.15 kelvin. ...
