It turns out if you use "Merge Columns" from the Transform tab, you get different code/results than if you use it from the "Add Columns" tab.
One entry point uses Text.Combine which ditches nulls and the other uses Table.CombineColumns which keeps them.

Of course Newsground has one of the more sensible methods of age verification.
