Cheesecake Deluxe
A series of photos from a cookbook Cheesecake Deluxe 8 servings 2 1/2 pounds cream cheese (5 8 Oz packages) 1/4 tsp vanilla extract 1 tsp grated lemon rind 1 3/4 cups plus 1/3 cup sugar 3 Tbsp all purpose flour Pinch of salt 5 eggs 2 egg yolks 1/4 cup cream Crust (see following recipe) 1 qt strawberries 1/4 cup water 1 Tbsp cornstarch 1 tsp butter 1 Tbsp cornstarch 1 tsp butter CRUST (for 1 9" springform pan) 1 cup all purpose flour 1/4 tsp sugar 1 tsp grated lemon rind 1/4 pound butter 1 egg yolk, lightly beaten 1/4 tsp vanilla extract 1. Preheat oven to 400°F 2. Combine flour, sugar and lemon rind. Cut in butter until mixture is crumbly. Add egg yolk and vanilla. Mix. Pat 1/3 of the dough over the bottom of a 9" springform pan with side removed. Bake for 6 minutes or until golden. Cool. 3. Butter the sides of the of the pan, and attach to the bottom. 4. Pat remaining dough around sides to a height of 2 inches. Cheesecake 1. Preheat the oven to 475°F. 2. Beat cream cheese until fluffy. Add vanilla and lemon rind. 3. Combine 1 3/4 cups of sugar, the floor, and salt. Gradually blend into the cheese mixture. Beat in eggs and egg yolks, one at a time, and the cream. Beat well. 4. Pour the mixture into the prepared crust. Bake for 8 to 10 minutes. 5. Reduce heat to 200°F. Bake for 1 1/2 hours or until set. Turn off heat. Allow cake to remain in the oven for 30 minutes with the door ajar. 6. Cool on a rack, then chill. 7. To prepare the glaze, wash and hull the strawberries. Crush enough to make 1/2 a cup. Boil the crushed berries, 1/3 cup of the sugar, the water, and the cornstarch for 2 minutes while stirring. Add the butter. Strain and cool. 8. Arrange the whole berries on top of the cheesecake and pour the glaze over the berries. Chill.

This is a black and white lithophane (a type of 3d printing) of my sister's 2 Great Danes when they were puppies. They are on a dog bed, on the floor and wearing bow ties around their necks.

My boy was also hyperthyroidism so I know where you are. But he was 17 at his diagnosis, and surgery wasn't even offered 😔
