I'd suggest looking for tutorials on the basics of vertex colors!

I find blender's vertex color tools pretty inconvenient, so I used this addon: github.com/Mahrkeenerh/...

I don't paint vertex colors with a brush tool, rather I select individual vertices/edges/faces and set them to the colors.
