Made this last night after seeing this thread and leaving the tab open for a week (thanks!) and A+ recommended. Ditched the odd roux-first technique, and saved a huge step w/rotisserie chicken and stock I already had vs the poaching. Pimentos and white wine really kick it up, don't skip em.
