I have rediscovered banjo eggs
Thick white bread, spread both sides with real mayonnaise, punch out a hole
Pop in a pan, crack in an egg, top with stuff (I've just used thyme, tarragon, and parmesan here)
Flip and do other side after very closely monitored short time
