Your only gating maintenance item is carbon steel or not - do not get carbon steel. The MAC chef knives are sufficiently nice and I don't do anything except take it to the sharpener when I remember. No need for a nice cutting board - plastic works fine and goes in the dishwasher!

I don't have central air but I usually aim for it to be 76ish inside my apt (NY). This is a temp where I'm not sweating in a tshirt and shorts which is good enough for me esp with a fan on 😂 but I get cold easily

yes! I started it tbh because I had various idol stickers etc I had nowhere else to put, but it's useful for notes on my knitting, book or other media reviews that won't fit in the 5 year journal, testing inks or markers, etc

(I've realized work planners are ok because I leave it on my desk open to the week so it is always there to remind me / for me to write stuff down. once a planner is closed / put away / not with me at all times, it's over..)

I also have only been able to use a planner at work. For personal stuff, I have accepted I'm not a paper planner and roll w/ gcalendar/tasks. To use up washi tape, I have a 5 year journal which is about all the real journaling I'm up for, and then a craft/hobby one which is used when I feel like it

I don't know about ventilation, but I've used a topo designs one for a while and have liked (but I think they are a little less work formal than some other options)
