El cortijo is a family run restaurant found just outside rute in the Cordoba region of Spain.
It is very traditional in style both decor and cuisine.
One of the great benefits is after you have eaten your lunch you can chill by the pool for the rest of the day.

Aquí es donde conviene vigilar la intensidad del caldo. A mí me gusta con cuerpo y carne, pero a mi esposa le quedó demasiado fuerte.

Preparación

El fideau es básicamente una paella con pasta en lugar de arroz. Cocinarla en una paellera es mejor, pero una sartén grande también sirve.
No soy chef profesional, sino una cocinera casera dedicada, dispuesta a probar cualquier cosa con productos que compro localmente.

Aceite de oliva o aceite de girasol
250 g de pasta fideau mediana
1/2 cebolla morada
1/2 pimiento rojo
3 dientes de ajo grandes
2 tomates frescos
Puré de tomate picado
200 g de jamón ibérico en dados
Chorizos crudos
Caldo de res
Pimentón ahumado
Sal de roca
Pimienta negra
