Some dinners from the past week or so, trying to focus on more veggies (sometimes) and keeping waste low by using up leftovers and stuff 🍽️
Minced mushroom, tofu and chicken served with sauteed squash and zucchini with some (semi) blistered green beans and topped with spicy mayo and sesame. On the side is a cabbage and parsley salad with lemon and oil Mac and grilled cheese sandwich with salami and diced pork sausage (def an indulgence kinda dinner : >) Stir fry with zucchini, yellow squash, red cabbage, minced and fried shallot and garlic (getting better at not burning them), diced tofu, sliced mushroom and celery with some sesame and chili crisp on top

Sister's on a special diet for the month, so I've been on top of finding good veggie dishes
Last night was minestrone with as many veggies as I could pack 🍽️
