I'm mentioning this because, as part of this process, I purchased an ounce of starter from King Arthur baking. They not only offer the jar of starter for purchase, but excellent documentation on how to use it for the first time and keep it going.

Full disclosure: I had a now deleted account that was originally about tech writing, but I wound up posting a lot about cooking & hobbies. 🙃 I'm starting over with 2 separate accounts & better boundaries for the algorithm.
