Using this recipe. But doing the steps a bit differently because if you mix all the dry rub with the oil instead of putting it on the meat first, the rub should burn less.

Plus, a chef who won $25K on Bobby Flay’s show did that for that reason — & it was the judging criteria he won on. So, yeah.

This is an approach we’d often use on this side of things, as one of those skinny little roast-beef-for-sandwiches packages routinely costs 20%-ish of what you’ll pay fir that big chunk of meat. 😏
