I’ve been working on healthier meals for the family, and one way I do that is by trying to have many colors represented. This was a good meal.

I was going for many color healthy tonight. Purple cabbage isn’t on my normal rotation but it was great, and the carrots were seasoned heavily but very balanced with a little lemon juice to finish.🍜

Dinner was rather monochrome, but I love a good meal of shrimp, salmon and roasted cauliflower. The salmon skin chip is always a great.🍜

Innovation can happen from necessity. I realized I hadn’t eaten and found fresh fava beans in the fridge. What I didn’t know is I don’t have any onions in the house or white wine.. so here are favas cooked in brown butter with onion and garlic powder with red wine.🍜

Dinner tonight consisted of veal sweetbreads, grilled skirt steak, braised kale, roasted asparagus and couscous. All tasted great, but the sweetbreads always steal the show.🍜

40 day dry aged pork that I dry brined and then roasted. The tomato avocado salad went perfectly with the pork. 🍜
