(This isn’t to say that there isn’t often a huge difference between dayboat and distro, depending on the product. Just that A) distance from coastline is usually meaningless for distro, and B) waaaaaaaaaay fewer places get dayboat stuff than people think.)

It’s the same everywhere. Even on the coasts, very few places are getting dayboat seafood, and then, only a select few local items. Everywhere in the country, you can get the same stuff from the same distro channels in the same timeframe. It’a just a question of how expensive it is.

I take it back. That’s not entirely true. At the end of the day, good is good, doesn’t matter how you got there. But make food that’s shitty *and* displays a lack of respect for the culture and craft, and you deserve to be destroyed.

(Doesn’t necessarily mean they’re *good*. Japan, like every other country on earth, is filled with plenty of people have terrible taste in food. But it’s one thing to say you think something is bad, and another to say or imply that it is illegitimate.)

I am of the opinion that the what is less important than the how. Or put another way, know the rules before you try to break them. I respect anyone who gets creative with a craft they’ve mastered, hit or miss. I have no patience for those who sling bullshit without taking the time to learn first.
