I slowly braise calabaza in a concoction of water, piloncillo, brown sugar, honey, cinnamon and cloves. As the liquid reduces it gets thick and syrupy. The water in the pumpkin slowly gets replaced by the syrup and its so ooey gooey good. We eat it like that straight out of the pot with cream too.

Two of the most perfect cheeses for quiche. Practice makes perfect on that pie crust, looks like a fine job.
