Nam Tok burgers: Marinade is mixed half into the burgers along with toasted rice powder then remainder on the exterior, charred and topped with shallot, mint and cilantro. Modified nam jim jeaw for dipping. This is the third time making it and think I've nailed both the burgers and sauce.

Ramen night! I made everything but the noodles and the tofu by hand - the tonkatsu soup alone took 18 hours. Features chashu, black garlic oil, shoyu egg with jammy yolks, and shiitake mushrooms.

One of the hits from NYE: Paccheri in beef marrow ragu.

Braise osso buco shanks in aromatics in white wine along with a bunch of marrow cut bones, braise until done. Remove meat and bones. Blend marrow into liquid, add meat and passata, simmer then add pasta+pasta water. Add bones for context.
