You can, but it's a bit more difficult if it's based on someone's memory of the shifts they worked a year ago vs a quarter ago

One issue is the lag involved! Someone has until January 2026 to file a return for 2024-25, and by the time HMRC process the data and chase up any missing income, the business may well have gone bankrupt or HMRC may struggle to prove they evaded tax given the lag

Fortunately it's now been pedestrianised and is much nicer!
