I have no idea how this will turn out, I’m literally just doing a standard white loaf recipe I use, only with only whole wheat flour.

Tried a 50% whole wheat sourdough today, just as an experiment. I was prepared for it to get much less of a rise so this was a pleasant surprise. Tastes really good. Prepping a 100% whole wheat loaf for tomorrow

Converted all my pizza recipes to sourdough since it is sourdough bread season anyway. These are some Bonci-style squares with pepperoni and scracciatella (plus a bunch of garnishes), baked in a Lloyd pan at 380c

There is this insuperable problem that the bottom tastes like pizza ‘cause it is baked in a pizza oven, not a tandoor. That’s not a terrible thing but it’s not quite right either.

Scrocchiarella, or Roman dough. Super thin and crispy, and easily the most slept-on pizza style I’ve tried (outside Italy anyway). It’s as good as ANY pizza. Plus it’s light enough that you can crush two of them solo

Gabriel Bonci-style al teglio pizza but with NYC toppings, 80% hydration with 10% whole wheat, baked in a Lloyd pan. These slice up perfectly as small or as large as you want. It’s really supposed to have Parma ham and arugula and shit but I have a teenage daughter that ruled against
